Why we pickle at Mrs. Klein’s
Our goal is to honor heritage, highlight freshness, and deliver bold, consistent flavors. Unlike competitors such as Mt. Olive, Patriot Pickle, or Chipico, who rely on mass production and in-jar fermentation, we focus on small-batch, hand-packed craftsmanship, giving each jar personal attention to flavor, texture, and safety.
What Makes Our Process Unique Compared to Other Factories?
- Full farm-to-jar oversight, from nearby farms to hand-packed jars.
- Continuous quality checks and testing ensures proper pH, salt, and acidity.
- Natural fermentation allows mid-process adjustments for consistent flavor.
- Small-batch craftsmanship guarantees that each jar delivers the signature Mrs. Klein’s taste: crisp, tangy, and perfectly balanced.
- Competitors cannot replicate the combination of hands-on attention, chemical monitoring, and local sourcing.

1. Preparation
- Fresh cucumbers and other produce are hand-selected, washed, and sorted to ensure only the highest-quality vegetables are used.
- Trimming and inspection remove any blemished or undersized produce.
Unlike competitors such as Mt. Olive, Patriot Pickle, or Chipico, we prioritize quality over mass-production speed.

2. Creating the Brine / Vinegar Solution
- A precise mix of water, vinegar, salt, and select herbs and spices is prepared for each batch.
- Concentration and pH are carefully measured to optimize natural fermentation and flavor.

3. Fermentation / Waiting Period
- Vat-based fermentation allows continuous monitoring of pH, salt levels, and acidity.
- Chemical testing occurs throughout fermentation, ensuring every batch achieves the correct flavor and texture.
- Temperature and timing are carefully controlled to maintain crispness and natural tanginess.
Unlike in-bag fermentation used by some competitors, this allows mid-process adjustments, guaranteeing consistency.

4. Packing the Jars
- Produce is hand-packed, ensuring proper layering and brine coverage.
- Herbs and spices are added uniformly for consistent flavor infusion.

5. Sealing
After hand-packing, jars are sealed using state-of-the-art equipment to ensure airtight closure.
- Proper sealing prevents contamination and locks in flavor, aroma, and crunch, maintaining the signature Mrs. Klein's texture.
- Each jar undergoes visual inspection for lid placement and vacuum integrity, along with chemical testing of pH, salt, and acidity to ensure food safety and shelf stability.
Unlike competitors who rely on automated systems with minimal oversight, our sealing process is both high-tech and closely monitored, reflecting hands-on attention.
